Cornish Hens with Spicy Garlic Salsa

Ingredients
- 6 Cornish hens, cut into quarters
- 4 Serrano chilies
- Juice from 3 limes
- 1 lime, sliced thinly
- 1/4 cup red wine vinegar
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 4 cloves garlic
- 1/2 cup of cilantro, minced
- 8 cilantro sprigs
- 1/2 cup olive oil
- Salt & pepper
- 1/2 cup crumbled white Monterey Jack cheese
Instructions
In a food processor, create salsa mix using the Serrano chilies, lime juice, red wine vinegar, Dijon mustard, honey, garlic, minced cilantro, and olive oil. Blend thoroughly. Place hens in a large storage bad and pour salsa mix over top. Place in refrigerator overnight. Remove hens and pour remaining salsa mix into a pot. Cook mix for 10-15 minutes until it slightly thickens. Grill hens 8-10 minutes on each side. Serve each hen with a tablespoon of salsa, sprinkle with crumbled cheese, and garnish with limes and cilantro sprigs.
