Crispy Salmon

Crispy Salmon

This is an unusual method of cooking salmon that creates a crispy crust on the dish. The key is to use clarified butter since regular butter will burn over high heat. You should use an oil thermometer to make sure the oil is at the right temperature.

Ingredients

  • 4 filets fresh salmon, skin removed
  • 3 oz clarified butter
  • 2 tablespoons flat leaf parsley
  • Salt and pepper

Instructions

Rub salmon with salt & pepper and sprinkle with parsley. Set at room temperature for 15 minutes, turning once. Pre-heat pan on high heat, then add clarified butter. When butter is hot (approximately 400 degrees), brown salmon on each side until cooked (about 2-3 min per side). Recommend serving over risotto or tomato sauce with pasta.
