Donar Kabob

Ingredients

  • 1 lb ground beef
  • 1/2 sweet onion
  • 4 cloves garlic
  • 1 tsp paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon cumin
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground coriander
  • Salt & pepper
  • 1 red bell pepper, sliced thin
  • 1/2 red onion, sliced thin
  • 1 jalapeno, sliced thin
  • 1 tablespoon olive oil
  • 1/2 cup Greek yogurt
  • 1 garlic clove minced
  • 1/2 teaspoon sweet paprika
  • 1 teaspoon minced chives
  • 1/2 teaspoon lemon juice

Instructions

Preheat oven to 400F.

Add half a medium onion and 2 garlic cloves to a small food processor and blend until a smooth pulp.

Place 1 lb ground beef in a bowl and mix in the onion garlic pulp

Season with salt, pepper, and the spices listed above.

Mix well, let sit one hour.

Prepare the yogurt sauce by mixing the Greek yogurt, minced garlic clove, sweet paprika, minced chives, lemon juice, and salt. Cover and refrigerate until ready to use.

Divide the meat mixture into 4-5 equal portions and roll each into a ball.

Form a square with each meatball and sandwich between 2 sheets of parchment paper.

Use a rolling pin or glass bottle to flatten the meat

Continue until you have about 5 parchment rolls. Place each parchment paper with meat on a baking sheet pan.

Add your veggies to a separate sheet pan. Drizzle with olive oil and season with salt and pepper.

Place veggies in oven for 20 minutes. Turn once. Set aside to cool.

Place the meat in an oven for 30 minutes at 400°F. Turn once.

Remove and let cool for a minute, then remove the parchment and slice to your preferred size.

Make a wrap using a thin pita coated with the yogurt sauce and add the meat, roasted vegetables, parsley, and feta.
