Lemon Shrimp in Linguine

Ingredients

  • 1 lb shrimp, peeled and deveined
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 1/2 cup Italian parsley, chopped
  • 1/2 cup arugula sliced thin
  • 2 shallots, chopped
  • 2 cloves garlic, minced
  • 1/3 cup olive oil
  • Salt and pepper
  • 1 lb linguine

Instructions

In a preheated pan on medium heat, prepare lemon infused olive oil by mixing 1/4 cup of the olive oil and the zest of one lemon. Cook for 3 minutes and set aside for future use. Bring a large pot three-fourths full of salted water to a boil over high heat. Add the pasta, stir well, and cook until al dente (tender but firm to the bite), about 10 minutes. In the same pan on medium to high heat, add 2 tablespoons olive oil and brown shallots and garlic (about 3-5 minutes). Add shrimp and stir fry for 3-5 minutes, and then add zest and juice of one lemon. In a large bowl, add the linguine and pour in the shrimp with sauce. Add parsley and arugula and mix in lemon infused oil. Salt and pepper to taste.
