Mongolian BBQ Ribs

Mongolian BBQ Ribs

This is a unique method of preparing ribs that involves boiling already braised ribs in a sweet and spicy sauce. The key is to cook the ribs until the sauce boils down into a thick caramelized sauce. The thicker the sauce gets, the more you need to stir the ribs to keep them from scorching. You can also finish these ribs over a hot grill to create a crispy crust.

Ingredients

  • 2 racks of pork ribs cut into individual pieces
  • 1 onion, minced
  • 2 garlic cloves, minced
  • 1 inch ginger root, minced
  • 1/2 cup soy sauce
  • 2 tablespoons red chili paste
  • 2 tablespoons brown sugar
  • 1 1/2 cups chicken stock
  • 2 tablespoons sesame oil
  • Paprika, garlic powder, salt & pepper

Instructions

Rub the ribs with paprika, garlic powder, salt & pepper. Let stand at room temperature for up to one hour. In a large bowl, mix the onion, garlic, ginger, soy, chili paste, brown sugar, and chicken stock. In pre-heated wok on high heat, add sesame oil and brown ribs thoroughly on all sides. Poor mix over ribs and cook at high heat until mix begins to boil. Set heat to medium and cook until the sauce is completely reduced, stirring constantly (about 30 minutes).
