Roasted Cipollini Onions

Cipollini onions (pronounced chip-oh-LEE-nee) are small, flat onions that are sweeter than garden-variety white or yellow onions. Their size and shape lends them well to roasting, and they are the perfect accompaniment to rack of lamb or a char grilled steak.

Ingredients

  • 1 dozen Cipollini onions, peeled and whole
  • 1/3 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper

Instructions

In small baking dish, mix onions with balsamic vinegar, olive oil, salt and pepper. Bake uncovered for 1 hour at 400 F.
