Sweet and Spicy Asian Pork

Sweet and Spicy Asian Pork

This is a very easy dish to prepare that blends the flavors of spicy thai chili peppers and sweet hoisin sauce.

Prep Time: 30 minutes
Cook Time: 20 minutes

Ingredients

  • 1 1/2 lbs pork, sliced into thin 2"-3" strips
  • 3 medium sized shallots, sliced
  • 8 ounces of fresh snow peas
  • 6 ounces of water chesnuts
  • 2 hot red peppers (serrano) minced
  • 3 cloves of garlic, minced
  • 3 green onions, chopped
  • 3 tablespoons sesame oil
  • 1 tablespoon paprika
  • Salt & pepper
  • 2 cups of cooked jasmine rice
  • For the sauce (mix thoroughly in separate bowl):
  • 2 tablespoons thai chili sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sriracha sauce
  • 1/4 cup rice wine
  • 1/4 cup chicken broth

Instructions

In a large bowl, season the pork with paprika, salt and pepper.  Add 2 tablespoons of sesame oil and mix together thoroughly.  Set aside at room temperature for 30 minutes.

In large, preheated wok on high heat, add the remaining sesame oil and stir fry the pork until thoroughly browned on all sides (about 8-10 minutes).

Stir in the hot peppers, shallots and garlic.  Cook for 3-4 minutes, stirring constantly.

Add the water chestnuts and snow peas.  Cook for 3 minutes.

Add the sauce and mix into the pork and vegetables.  Cook until sauce is reduced (about 4-5 minutes).  Note that the snow peas should remain crisp to the bite.

Salt and pepper to taste.

Serve over jasmine rice.
