Roasted Monkfish

Monkfish is a flavorful white fish that is referred to as the ´poor-mans lobster´.
Ingredients
- 2-3 lbs monkfish tail, filleted/skinned
- 3 whole garlic bulbs
- 4-5 cloves of garlic minced
- 5 bay leaves
- 4 tablespoons olive oil
- 2 teaspoons fresh thyme
- 1/2 teaspoon fennel seeds
- Juice of 1 lemon
- Sea salt and black pepper
Instructions
Preheat oven to 400
Prepare the monkfish by removing all traces of any thin grey film on the monkfish, then rinse and dry the fish.
Roll the fish lengthwise into a cylindrical shape and tie in sections with string.
Cut small slices in the side of the fish and insert garlic. Tuck bay leaves under the strings.
In a shallow roasting pan, add half of olive oil, then fish. Carefully roll fish in the olive oil.
Season the fish with thyme, fennel, salt and pepper. Place garlic bulbs around the fish and drizzle the fish and garlic bulbs with lemon juice and remaining olive oil.
Place in oven and roast for 20-30 minutes.
