Braised Brussels Sprouts
Ingredients
- 1 lb Brussels sprouts, sliced in half
- 1/4 lb pancetta, diced
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup white wine
- 2 tablespoons fresh thyme, minced
- Paprika, salt & pepper
- 3 tablespoons olive oil
Instructions
In a large bowl, mix the Brussels sprouts, garlic, thyme, paprika, salt and pepper. Add 2 tablespoons of olive oil and mix thoroughly. Let stand at room temperature for at least one hour. Preheat oven to 400 degrees. In a large preheated pan on high heat, add remaining oil and brown pancetta for 4-5 minutes. Add Brussels sprouts to pan and brown evenly on all sides. Deglaze with white wine and cook until reduced (about 3 minutes). Stir in chicken broth and place in oven for 25 minutes, stirring at least once.
