Stuffed Artichokes

Stuffed Artichokes

Ingredients

  • 6 small artichokes
  • 4 oz crumbed sausage
  • 2 shallots diced
  • 4 cloves garlic diced
  • 2 teaspoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1/4 cup white wine
  • 2 tablespoons olive oil
  • 1/4 stick butter
  • Salt & pepper

Instructions

Cut the top of the artichokes off (about 1.5 inches) and cut the stem of so that the artichokes will sit level. Steam for 8-10 minutes until soft. Remove and let cool for 5 minutes. Using a small spoon, remove the center of the artichokes including the furry center. Place artichokes in a baking dish. Preheat oven to 350 degrees. In preheated pan on medium to high heat, add olive oil. Brown garlic and shallots until softened (3-5 minutes). Add sausage and cook until brown (about 5 minutes). Deglaze with white wine. Place sausage, shallots and garlic in a bowl, then mix in lemon juice, Dijon mustard, salt and pepper. Fill center of artichokes with mix. Lay thin slices of butter on top and place in oven. Bake for 15 minutes and serve.
