Collard Greens

This is a true southern classic dish that exemplifies the essence of soul food - Hearty and made from the heart. While there are as many versions of this dish as there are mama's to teach us how to cook, this one uses a very special ingredient - smoked turkey wings. Try it and I think you will love this version.
Ingredients
- 5 lbs collard greens, cleaned and stems removed and chopped
- 1 white onion, diced
- 6 cloves garlic, minced
- 2 tablespoons vegetable oil (I substitute non-virgin olive oil)
- 1 smoked turkey wing, deboned
- 2 cups chicken stock
- 8 oz thick cut bacon, diced
- 1/2 cup white wine (prefer a sauvignon blanc)
- 1 teaspoon cayenne pepper
- Salt & pepper to taste
Instructions
Sauté bacon in oil for 3-5 min, then add onions and cook until yellowed (3-5 min).
Then add garlic and cook until soft.
Add add turkey meat, chicken stock and chopped greens.
As greens cook down, add more broth as needed and season with salt & pepper.
Cook until tender, about 1 hour.
